I love the freshness of new years. Of new days. Of newly born babies. Of new everything! The smell of new is drenched in hope, possibility and optimism. There is an abundance of positive energy at the wake of this infant year. Can you feel it? I sure am channeling it and making the most of it now. So far, this year is my best yet! I read this article yesterday at 7 a.m, and the author stated something that is actually true. Each year, people start with so much enthusiasm but end up being predictable and playing small; just as they have in all past years. I have sought to make this year BIG. Today’s recipe was what I was meant to make on the day I made these pancakes. I had the concept for amarula crepes, but I did not have creme liqueur or strawberries and felt too lazy to go get some. After the holidays and with all the guests gone, plenty of alcohol is usually still sitting around. I then remembered this recipe and decided to bring it to life. My amarula pancakes and macerated strawberries are the very definition of perfect. Read on to know what a proper grown up brunch should look and taste like #NOM
COOK TIME: 30 MINUTES MAKES:4
Ingredients
For the crepes
1 cup of flour
5 tablespoons of sugar
1 teaspoon of instant cocoa
5 tablespoons of Amarula Creme Liqueur
1 egg
3/4 cup of milk
For the Strawberries
1 handful of fresh strawberries
1 teaspoon of sugar
1/2 a lime, squeezed
2 tablespoons of amarula liqueur
1/2 a teaspoon of cardamom powder
Method
Chop your strawberries in quarters and put them in a bowl. Add the creme liqueur, the lime juice, cardamom and sugar. Toss until everything is evenly mixed and set aside. The longer this rests, me deeper the flavor and the juicier strawberries will become. So always make these at the beginning so that you have a more cohesive and delicious macerated strawberries.
Begin working on your crepes. Beat your egg together with your sugar until it becomes frothy and pale yellow. To this, add your flour and milk. Whisk it until it is all evenly distributed. Pour on your creme liqueur, 2 tablespoons at a time. Taste after each addition and add if you would like a bolder taste of the creme liqueur. Stop adding once you have attained your preferred level of amarula flavor in your crepe batter.
Lightly oil your pan and laddle the batter for the crepes. Cook each side for until golden brown then plate them. Scope your juiced up macerated strawberries and place them over your hot, soft amarula crepes. Dig in!!!!

Macerated strawberries are usually prepared with just sugar and strawberries. But you know this had to go down with a #KK twist! I wanted to use lemons but opted for limes since they are milder and countered the sweetness. The cardamom powder complimented the amarula flavor and brought this to level 100.
You can use any other creme liqueur you have. The one thing I can guarantee is that you will enjoy this!

In my opinion, incorporating both of these in a dish is the closest thing to heaven. I take form your comment that you strongly disagree… thats ok too. To each their own :)). Still, I highly recommend that you try this recipe out. Its really tasty!

for the recipes that use all these three spices, can i just use this one?
You can. The only problem is the proportions hence there may be slight difference in taste. For example, if a recipe uses 1 tsp of cumin, 1 tbsp of coriander and 1/4 tsp of turmeric and you use 2 tablespoons of dhana jeera you will not know if the jeera has the same ratio as the recipe. You get? But you know what, recipes are not written in stone. You can use the dhana jeera and adjust it to suit your taste. You could develop better taste in the end.

This really does scream brunch!!! You will not be disappointed! As for the eggs, you can omit them but the crepes will not look or taste as intended. I think eggs are very important to this. As for the strawberries, I bought mne from Nakumatt. You can also get huge ones from Ukwala.
