I like having my eggs in different kinds of ways. Poached eggs are very popular globally but I have never tired them just due to one reason. Fear. Fear of all that wetness and liquid yolk which I personally do not find appealing. While that is what excites most people, for me, that made me stay clear of poached eggs. But I decided to take the plunge after realizing that maybe it is not that bad after all. I did and I was so impressed. When I was doing my online research, I got the implication that making poached eggs is so complicated. But I found that not to be true. All you need is your ingredients, and an eager heart :). Do you ever wake up and just feel like cooking nice things because the day looks beautiful and has started really well? I do not know if I am the only one who feels this… But on the particular day I made this dish, I woke up feeling really up beat. The sun was shining so bright outside, Ngong hills as seen from our kitchen window looking as majestic as always and the morning air was crisp and clean. The day ahead looked really promising. I decided to make the day even more fantastic by having a very good first meal of the day.
I decided to have scrambled eggs for breakfast, and you know, as usual, these were not just any normal scrambled eggs. I decided to play around with my pantry ingredients and came up with the most delicious scrambled eggs with the most spectacular flavors and amazing textures. Start your day on the right foot with my out-of-the-world sesame seed and ginger scrambled eggs.
Am I the only one who is always a bit scared of those foods that are dairy/sugar/fat free? I mean, they have removed all the great stuff :D. However unless it is by medical instruction, I do not think the above mentioned are bad for you, unless taken in excessive quantities.
Today I decided to step out of my comfort zone and attempt one of my favorite breakfast dishes, drop scones, but without dairy. I was pleasantly surprised that the drop scones tasted really really good, if not better. It then made sense to me why dairy-free products are fast gaining popularity across the globe. I had some left over coconut cream from this dish and I decided to use that in place of my dairy.

I am lucky to live around people who love to host parties to facilitate neighborhood get-togethers, and prepare the best food during the times they host. Today’s recipe is actually one of my favorite salads, which I first ate at my neighbors place. I have been hooked on it since! It is so easy to make, but the flavor profile is so sophisticated. I usually love having french-style pancakes, crepes, for breakfast because they are light and my sisters and I finally landed on the perfect ingredient combination. The most common pancakes however, are the thicker, American-style pancakes. I can count the number of times I have had these style of pancakes. In the past, I have never really been a fan of them because I personally found them a little bit heavy. To fix what I did not like, I experimented with some ingredients and I have finally landed on the perfect pancake recipe.
One of my friends has been asking for a pancake recipe on Instagram literally since the day I opened my account 😀 and this is one recipe I am proud to share because I know just how good it is. My sisters loved it, and I know you will too 🙂
I have always loved french toast for breakfast. It is such a lovely way to begin the day. Besides that, there are so many ways you can have your french toast, and I love this because it allows one to be creative in the kitchen. I did orange zest french toast some months back and they were unbelievably tasty! My Uncle brought us some coconuts from Mombasa when he came to visit us in Nairobi and I decided to make coconut french toast this time round. I added some caramelized pineapple and this perfectly complimented the coconut in the french toast. I was not disappointed.

I have very few memories of my daddy actually preparing a meal in the kitchen. But those that I do remember,what he made never disappointed. One of the things I remember are the eggs my daddy used to make for my sisters and I. During most Christmas holidays, we traveled to Maragoli.On Christmas morning before going to church, my daddy would make us some scrambled eggs, which he beat with some whole cream milk. The eggs became so rich, so moist and so tender and this was the perfect way to begin our Christmas day. These days, now that we are big girls, we are the ones who prepare meals for daddy :).
Today I made and omelette which was beaten with finely chopped onion and coriander stalks. To make this even more hearty, I added a tomato and bell pepper stuffing with a light dust of black pepper. Fast, tasty and unforgettable omelette.
Our home has been having some electrical issues for sometime now such that in certain rooms, you cannot use high power electronics. For that reason, the oven had never been connected to the electricity. For a long time I thought that maybe using the oven will not result into any serious electrical issue. You never really know until you try. Therefore, one day when I was home alone, the risk-taker in me connected a plug to the oven wires, and to my delight it worked. I knew either everything would go well, or I would burn the house, the oven would explode or an electrical surge would destroy the entire neighborhood. Despite my fears, I went straight to work and decided to bake something. It went great but right when I was opening the oven door to remove my cinnamon rolls, the fuse went off and the plug melted. I disconnected everything, and acknowledged that I am no electrician!
As I tasted my dish, I was delighted that my risk paid off. These cinnamon rolls were so soft and the coffee beautifully offset the sweetness of the honey. I present to you my coffee glazed cinnamon rolls.
We all have those days when we want to have something a little bit sweet and light. Where I live, it can be a bit of a hustle to leave home and get to the nearest bakery because this area is not actively supplied with public transportation which is the means I use. Therefore, whenever that craving kicks in I turn to my favourite comfort food,Mango stuffed crepes, which are fast, tasty and easy to make from home.
Like most of the things I know how to make, this one too was taught by my mother. As years went by, various modifications were made to the recipe. My elder sister, Sieva, perfected the crepe recipe and it is the same one we use to date. My twist on these fabulous crepes was adding various fillings to them. For this filling I used my favourite fruit, mangoes, with some fresh orange zest and a dash of ground cinnamon that elevates the sweetness of the mango and brings out the tartness of the orange zest.
These heavenly tangy mango stuffed crepes make for an ideal healthy breakfast, a rich brunch or a filling snack.
French toast brings me fond memories of my holidays back in primary school. Once a week, my mother would make these for my sisters and I. I made sure I woke up very early on those mornings so that I do not miss these babies!! My mother used milk and eggs only, however in my recipe, I added orange zest, cinnamon, nutmeg and some orange marmalade. There is no better way to start your day than with this tangy meal! They are not only delicious, but they are very easy to make.
