Have you ever tried out a new recipe with so much excitement but it turned out way below average? That happens to me too sometimes. I was so excited to make some crunchy drumsticks sometime back but they were not as good as I anticipated. My first and most honest critics, my family ,thought they really could have tasted better. And I agreed. Even though they looked really good, they were grossly under-seasoned. I could not bring myself to post a recipe that I myself don’t stand confidently by. Quality of content trumps quantity of content any day.
So the next day, I decided to use the left overs from the remaining drumsticks and make something else. I decided to make grilled cheese chicken sandwich which was so indulgent and so so sooo perfect. This brought back my confidence after that no-so-good drumstick kitchen experience. And this was one of the tastiest recreation of left overs I have made to date!
I encourage you too to try new things. You will fail…numerous times, just as I do. But do not run away from the kitchen forever. Β Take it as a learning experience and up your game each time. You will become even better as a result π
PREP TIME: 5 MINUTES Β Β COOK TIME: 10 MINUTES Β Β Β SERVES: 2
My fantastic grilled cheese chicken sandwich ingredients
1/2 a tomato, sliced
1/2 red onion, finely diced
3 garlic cloves, minced
1/2 green bell pepper
1 tablespoon of black pepper
Cheddar cheese
4 slices of bread
2 large drumsticks (left overs)
Method
Remove the crust from the chicken and using a fork, strip the flesh off the chicken by scrapping it off. If your chicken does not have a crust, just begin by scraping it off.
Heat come vegetable oil in a pan and add the chicken strips together with the black pepper. Allow them to stay on the heat for about 5 minutes or until they develop a deeper brown color. This is an important sten since it enhances the flavor. Remove from the heat and set aside.
In the same pan, fry your onions and green bell peppers until they have softened. This will take 2-4 minutes. Remove from heat and set aside.
Put your bread on a grill with some cheese on top. Add the chicken. Once the cheese starts melting, and more on top of the chicken followed by the peppers and onion, lastly, the fresh tomatoes. Top this with the top piece of bread then dig in!
Too easy right???!

SHORT CUT
If you do not have a grill, you can just assemble the sandwich as instructed. ie { bread-cheese-chicken-cheese-peppers-tomato-bread}. Then, put this in the microwave for about 30 seconds. This will melt the cheese into gooey deliciousness. But if you use this method, you have to ensure still that the chicken has been recooked and the peppers and onions too. I use this method a lot of the time when I just feel lazy. We all love short cuts! π
