Minced Beef Kebab with Tangy Dip

I had a real Kebab addiction problem while I was in high-school. The love I had for these was so strong it was almost obsessive. I needed my kebab kick each and every day. They used to be quite cheap back then. And when the prices increased, I just could not fuel  my addiction so I kicked it.

I have never made kebabs on my own. I decided to give them a try but with a recipe and style that differs from the ones that are traditionally had in Kenya. Mine did not use eggs to hold the meat together, but used bread crumbs.Instead of deep frying mine, I grilled them.  And to make this more flavorful, I added a beautiful array of spices.

Kebab Ingredients

For the kebab

1 Kg Beef Mince

2 Medium Sized Onions – Finely Minced

Fresh Coriander Leaves and Stocks – Chopped

5 garlic Garlic cloves, minced

1 Lemon, squeezed

Bread Crumbs – 250 gm

1 Tablespoon Garam Masala

1/2 Teaspoon Turmeric Powder

1/2 Table spoon of Red Chilli Powder (optional )

2 Tablespoon Cumin Powder

1 Tablespoon Coriander Powder

Salt to taste

1 Tablespoon of Oil

2 tablespoons of black pepper

FOR THE  DIP

7-8 Stocks and leaves of Fresh Coriander Leaves

2 table spoons of freshly squeezed lemon

2 Cloves of Garlic

One Small Onion

1 inch Ginger

1/2 cup of  mala (you can use plain yoghurt or sour cream)

 

Method

The steps for making these Kebab are really simple and straight forward. They are as follows:

1. Simply add all of the ingredients for the kebabs in a large mixing bowl and mix together well . The bread crumbs help everything to hold together.

2. Set aside for maximum of 15 minutes.

3. Mould the meat onto the BBQ Skewers. Before using the skewers, soak them in water. This prevents them from igniting while using them on the grill. I bought my skewers from Nakumatt in the party section. They cost me about 120 shillings.

4. Then just slap them on the grill and keep turning them until it is done. They should turn golden brown towards the end.

5. Check every five minutes.

6. Serve with the amazing mala dip. { For the dip, put everything on a small bowl and mix them together. Allow it to chill before serving. Easy right?!)
